I’ve never really understood the definition of dry humor, or something having a dry sense of humor.

Dry humor is subtle, associated with words rather than visible emotions, often ironic. The speaker is more making an observation that turns out to be amusing, not begging for a laugh. EX: Jerry Seinfeld. The opposite would be broad humor: jokes, big gestures, etc. EX: Rodney Dangerfield.
